※ Chocolate chip banana bread with a cinnamon sugar maple crust


INGREDIENTS:

  • 2 cups plain flour
  • 1/2 cup milk chocolate chips
  • 2 tsp baking powder
  • 1 tsp ground cinnamon (for topping)
  • 1 tsp sugar (for topping)
  • 1 tsp maple sugar (for topping)
  • ½ cup caster sugar
  • ½ cup brown sugar
  • 2 eggs, lightly beaten
  • 1/3 cup (80mL) oil
  • 1 tsp vanilla extract
  • 4 ripe bananas, mashed
  • Butter and honey, to serve

METHOD

Preheat the oven to 180°C. Grease and line the base of a loaf pan (mine is 11cm x 21cm).

Sift the flour & baking powder into a large bowl. Stir in the sugars. In a separate bowl, combine the eggs, oil and vanilla. Add a mashed banana to the dry ingredients and add the combined wet ingredients. Add chocolate chips, fold until just combined - do not overmix.

Place mixture into the loaf pan, sprinkle with cinnamon, and maple sugar and regular sugar and bake for 50 minutes or until a skewer inserted into the middle of the loaf comes out clean. Allow to cool for 10 minutes, then remove and place on a wire rack to cool.

Once cooled, slice it thickly. Serve with a spread of butter and drizzle with honey.
