※ Refreshing Ginger Cordial

Served with soda water and a lime slice Sorry for lack of recipe updates I have been unwell and off food. (I know shock horror to those who know me!) Here is a simple recipe for ginger cordial that is delicious and refreshing. Shown here served with soda water. INGREDIENTS 1 li me 1/3 cup (80g) caster sugar 7cm-piece fresh ginger, peeled, sliced crossways Ice cubes, to serve Lime wedges, to serve Chilled tea or soda water, to serve METHOD Use a peeler to peel the rind from the lime, then juice the lime. Place the sugar, ginger, lime rind, lime juice and 1.5 litres water in a saucepan. Stir over a low heat until the sugar dissolves. Bring to boil. Reduce heat to medium-low. Simmer for 10 minutes. Remove from heat. Set aside to cool. Strain into a large jug. Place in the fridge to chill. Discard the ginger and zest and lime rind. To serve, place some cordial in a glass with a few ice cubes and lime wedges. Pour over chilled tea or soda water to serve.

※ Cinnamon Donut French Toast

Cinnamon Donut French Toast INGREDIENTS 2 eggs 4 teaspoons vanilla extract 60ml full-fat milk 4 slices from a small white loaf or 2 slices from a large white loaf, each large slice cut in half 25g butter, plus a drop of flavourless oil for frying 50g caster sugar 1 teaspoon of Cinnamon (made with TBD Imports Imports Red Ape Cinnamon ) Serving Size : Serves 2 METHOD 1.Beat the eggs with the milk and vanilla in a wide, shallow bowl. 2.Soak the bread halves in the eggy mixture for 5 minutes a side. 3.Heat the butter and oil in a frying pan, and fry the egg-soaked bread until golden and scorched in parts on both sides. 4.Put the sugar and cinnamon on a plate and then dip the cooked bread in it until coated like a sugared doughnut.
