Husband felt like pavlova so I made him one. Recipe source DONNA HAY Only thing I added was some vanilla beans and two tablespoons of icing sugar to the whipped cream.

※ Flourless Chocolate Cupcakes - Made with Almond Meal

INGREDIENTS: 180g (6 oz) butter, chopped 220g (7 1/2 oz) quality dark cooking chocolate, chopped 1 1/4 cups caster sugar 3/4 cup almond meal 1 cup cocoa powder, sifted 5 eggs 2 Tablespoons of hazelnut oil METHOD: Preheat the oven to 140 degrees C (280 degrees F).  Place the butter, chocolate and sugar in a saucepan over low heat and stir until melted and smooth. Place the almond meal and cocoa in a bowl and whisk in the chocolate mixture add hazelnut oil. Add the eggs gradually, whisking until well combined. Grease 12 x 1/2 cup (4 fl oz) capacity non stick muffin tins. Or alternately use patty cases. Spoon in the mixture and bake for 30 minutes or until firm.  Allow to cool in the tins.

FOR THE DOUGH: I used the Karen Martini recipe on recommendation of a coworker. I will never look back it is amazing! INGREDIENTS: DOUGH   800 grams flour 250 grams semolina 20 grams salt 2 sachets dry yeast (14 grams) 600 ml mineral water 50 ml oil  a little olive oil (brushed onto base to stop sticking on BBQ)  INGREDIENTS: FILLING 800g low-fat fresh ricotta 250g frozen spinach, thawed, excess liquid removed Pinch of nutmeg 1 teaspoon dehydrated onion 1/2 teaspoon salt 1/2 teaspoon pepper 1/2 cup grated Parmesan METHOD: DOUGH Using a stand mixer with a dough hook, add the flour, semolina and salt. Whisk the yeast, mineral water and oil in a separate bowl. Turn the mixer to slow, add the liquid all at once, and bring together to a soft dough. Once combined, turn the speed to high and mix for a further 6 minutes until you have a smooth, silky, springy dough. Remove

We have attended several Friday night dinners at the night Jar Market in Geelong. So many great varieties of international food. really looking forward to seeing what is on offer this year.
