Cook it outside. BARBECUED 'BURGERS 1 small onion minced 1 clove garlic, minced 2 tablespoons butter or margarine 1 8-ounce can tomato sauce 1 7-ounce bottle 7-Up 1 tablespoon Worcestershire sauce 1 teaspoon salt 1/4 teaspoon pepper 10-12 uncooked hamburger patties Lemon slices Brown onion and garlic in butter until softened. Stir in tomato sauce, 7-Up, Worcestershire sauce, salt, and pepper. Heat mixture to boiling, then reduce heat and simmer five minutes, stirring occasionally. Makes about 1 1/2 cups sauce. Brush meat with sauce and grill on one side until browned; turn. Top each patty with a lemon slice and brush with more sauce. Cook until meat reaches preferred degree of doneness. Makes 10-12 hamburgers. Please excuse the iPhone photo, this was a quick throw together on a week night. We love making home made takeaway in our household.  Always wanted to attempt the Big Mac Burger  but slider size.  Ingredients needed. Serves 2 (and a toddler)  1/4 cup shredded iceberg lettuce. 8 bread and butter pickles  Finely diced onion (about 1/4 of a small onion or less) Small hamburger buns (purchased an 8 pack from Woolies for $4) 500gsm of really good quality ground beef.(I went with the leanest available at my local butcher) Secret Sauce -  you could have a go at making it , but I just bought 3 mini tubs from my local McDonald's for 50c each ( they now sell them in Australia for a limited time. ) Salt and pepper to season meat to taste before cooking. 4 slices aged cheddar cheese - cut in half (so is enough for 8 sliders) Split bun in haf and lay out on a cutting board Shred lettuce as fine as you can and distribute evenly...

INGREDIENTS   1 kilo diced beef 1 tablespoon olive oil 1 tablespoon butter 1 1/2 cups beef stock (or stock cubes reconstituted) 1 large carrot diced,  1 tomato roughly chopped,  1 zucchini diced,  1 potato diced,  2 stalks celery diced,  1 cup pumpkin diced,  1 cup red wine 2 onions diced,  4 cloves garlic thinly sliced Few sprigs thyme chopped thyme,  Few sprigs Rosemary ,  1/4 teaspoon paprika,  1/4 black pepper, 1/4  chili salt,  1/4 celery salt,  2 tablespoons Worcester sauce METHOD Brown off meat in small batches and place straight into slow cooker. While doing so, I dice up all vegetables roughly and thrown them straight into slow cooker with exception of onion and garlic. Last year Jake cooked me the most delicious food on NYE, so I thought I had better return the favour this year. (even though I cook all the time anyway) I went with an Asian flavours theme. I went with a bright green theme.  Miguel approved! Mini chicken meat balls with Asian herbs & hot chili dipping sauce  Mini chicken meat balls with Asian herbs & hot chili dipping sauce   INGREDIENTS: 1/4 Kg chicken mince 1 clove garlic crushed 1 egg 1/2 cup breadcrumbs 2 TBS Soy Sauce Coriander - To taste (I used about 1 tablespoon chopped) Thai Basil - To taste (I used about 1 tablespoon chopped) Vietnamese Mint - To taste (I used about 1 tablespoon chopped) 1/2 teaspoon roughly chopped ginger   Pinch of salt Olive oil or Canola for frying.  METHOD Mix all of the above and form into small bite sized pieces. They turned out even better than the normal version. Slow cooker worked a treat. Variation of previous recipe, now with beef and slow cooked. INGREDIENTS 1 Shallot finely diced 1 Tbs Hot sauce Pinch Smoked Salt 2 Cloves of Garlic Crushed 2 Cans Cola 3 Tbs Worcestershire Sauce 1 Tsp Cayenne Pepper 1/2 Cup tomato sauce 1 Jar apricot jam (small) 2 Tbs Apple Cider Vinegar Dash liquid Smoke Pepper to taste About 8 - 10 large beef ribs * tablespoon olive oil * You can use however many you want really. There is tons of sauce left over.  METHOD Brown off ribs in a hot pan with some olive oil. While you are browning the ribs, combine all the other ingredients in the slow cooker. Cook on low heat for about 4 hours or so. (I cooked mine a little too long and the meat was too soft. ) Take ribs out of slow cooker and place on a baking tray. Got a dear friend staying the night tonight & when I asked her what she wanted she said "Your Cola spare ribs"  So today I have adapted the recipe from previous:  ( http://www.elliluca.com/2012/10/cola-spare-ribs.html ) To a slow cooker versio n as I don't have as much time today to do the other method. I will post photos of the results tomorrow, the method also. I also decided to try beef ribs as I have never had them before. The house already smells so delicious.

Serves 3 - 4 people in standard size ramekins. special equipment: Potato ricer (optional) INGREDIENTS - Pies 2 Medium sized porterhouse steaks, fat trimmed off 1 Large onion 3 cloves garlic 2 Tablespoons fresh chopped thyme 2 Tablespoons fresh chopped parsley Pepper Beef or chicken stock 1 1/2 cups (if using powdered don't add any salt) 1/2 cup red or white wine 2 Tablespoons of Worcester sauce. 2 Tablespoons Apple Cider Vinegar Cornflour (enough to coat the meat before browning and frying off) Tablespoon of olive oil 3 Tablespoons  instant gravy mix (I use greens chicken, I find beef too rich)  INGREDIENTS - Cheesy Mash Topping 2 Large Potatoes 2 Tablespoon of Butter Dash of cream 1/2 teaspoon white pepper 1/2 cup grated tasty cheese METHOD - Pie Cube beef into preferred bite size pieces (I like them small about 1 cm or so) Coat in corn flour and Fry off in small batches till brown, place in slow cooker as you go Add onions and garlic ...

INGREDIENTS: Piece of corned beef- silverside (rinsed well in cold water.) 4 cloves garlic, crushed 12 peppercorns 6 cloves 2 cloves of garlic, smashed with a knife 1 lemon, cut in half (including rind) 4 fresh bay leaves (well worth the effort of maintaining your own tree) crumpled 1 Tbsp grated ginger 1 Tbsp brown sugar 2 Tbsp Worcestershire sauce 2 bay leaves METHOD Into a large, heavy based casserole/steamer, place sufficient water to cover the beef Add all of above ingredients Bring the pot to a quick boil, reduce heat to a simmer and cook for approximately one hour to one and a half hours - depending on size of joint. Generally, when the beef is fully cooked it will start to 'float' towards the surface. Turn off the heat and leave to cool off in liquid for a while before serving. BEEF RENDANG INGREDIENTS 1 lemongrass stalks, roughly chopped  20g/¾oz coriander seeds  ½tsp cumin seeds  ½tsp turmeric powder  50g block coconut cream  1½ large onions, sliced  3 garlic cloves, chopped  3 red chillies, seeds removed, chopped  1 thumb-sized piece ginger, peeled and chopped  1 bay leaf  750g boneless beef shin, cut into 2.5cm/1in cubes  400g canned coconut milk  250ml strong veal or beef stock, heated  METHOD - BEEF For the beef rending, pound the lemongrass to a pulp using a pestle and mortar. Tip the lemongrass into a small bowl. Heat the frying pan over a medium heat. Add the coriander, cumin seeds and turmeric and dry fry until fragrant. Tip the spices into a spice grinder or the pestle and mortar. Grind the spices to a powder if using a grinder, or pound in a pestle and mortar until the spices are as smooth as possible. Set aside. I had some left over bolognese but didn't want pasta again, so I decided to stuff some peppers / capsicums. INGREDIENTS Left over bolognese sauce Freshly chopped parsley to taste fresh red chili diced finely. Parmesan & or tasty cheese about 1/2 cup grated 100 gsm crumbled fetta cheese METHOD Cut tops off peppers; remove seeds and membranes. Chop edible part of tops and set aside. Rinse peppers under cold water. Place peppers in a large baking dish with about a cup of water in the bottom & a dash of olive oil. I mixed left over Bolognese with some crumbled fetta cheese, some freshly chopped parsley and a fresh red chili diced finely. Bake at 350° for 55 to 65 minutes. If desired, top stuffed peppers with a little shredded Cheddar cheese just before peppers are done; bake until cheese is melted. I previously blogged a different recipe  here  for stuffed peppers.

"Queso" is cheese in Spanish.  A quesadilla is a toasted tortilla with melted cheese inside. My favorites are beef, cheese, baby spinach, hot sauce and onions. I had some vegetarian friends over for lunch on Sunday & I made an array of fillings.  What you need: Large flour tortillas Oilve oil Suggested fillings Slow roasted caramelized pumpkin Slow roasted capsicum; red and green Caramelized onions Guacamole Sour cream Home Made Sriracha Slow cooked beef with home made seasoning  ** Sliced mushrooms Green onions  Black olives, sliced Fresh tomatoes, diced Chicken pieces Avocado Grated cheese  Refried beans We grilled ours on our George Foreman grill, if you don't have an indoor grill, a fry pan will work just fine.
