Spinach and Feta Gozleme - served with lemon and sour cream. Preparation time: 50 minutes, plus 30 minutes proving  Cooking time: 1 hour, 15 minutes Makes 24 INGREDIENTS 2 tbsp instant dried yeast  2 tsp caster (superfine) sugar  900g (6 cups) plain, strong bread and pizza flour, plus extra for dusting  80ml (1/3 cup) olive oil 2 garlic cloves 10g (1/2 cup) flat-leaf parsley leaves 5g  (1/4 cup) mint leaves 200g baby spinach leaves  500g Greek feta cheese, crumbled  freshly ground black pepper  olive oil cooking spray  lemon wedges, to serve METHOD 1 Add 600ml water, the yeast and sugar to a Thermo mixer bowl, measuring cup in. INGREDIENTS 4 tablespoons butter (I used Lescure butter) 1 clove garlic, minced 12 slices French bread cut to desired thickness I do approx half a cm each METHOD Preheat oven to 350 degrees F (175 degrees C). In a large saute pan, melt butter over medium heat. Stir in garlic; cook and stir for 1 minute. Add bread slices, and toss to coat.  Spread on a baking sheet. Bake for 15 minutes, or until crisp and dry.  Check often to prevent burning.

INGREDIENTS: 2 cups plain flour 1/2 cup milk chocolate chips 2 tsp baking powder 1 tsp ground cinnamon (for topping) 1 tsp sugar (for topping) 1 tsp maple sugar (for topping) ½ cup caster sugar ½ cup brown sugar 2 eggs, lightly beaten 1/3 cup (80mL) oil 1 tsp vanilla extract 4 ripe bananas, mashed Butter and honey, to serve METHOD Preheat the oven to 180°C. Grease and line the base of a loaf pan (mine is 11cm x 21cm). Sift the flour & baking powder into a large bowl. Stir in the sugars. In a separate bowl, combine the eggs, oil and vanilla. Add a mashed banana to the dry ingredients and add the combined wet ingredients. Add chocolate chips, fold until just combined - do not overmix. Place mixture into the loaf pan, sprinkle with cinnamon, and maple sugar and regular sugar and bake for 50 minutes or until a skewer inserted into the middle of the loaf comes out clean. The husband hijacked the kitchen for my birthday and made a beautiful meal for me. So proud of him, he had never cooked such an array of items at one time. It was super delicious & I think he needs to cook more! Tomato Consommé - Jamie Oliver INGREDIENTS 2 kilos lbs tomato 0.50 cup vodka 2 tablespoons horseradish 1 to taste salt 1 to taste black pepper 1 tablespoon vinegar 0.50 cup fresh basil 2 garlic clove 1 slice beetroot NOTES: *** You also need cheesecloth for filtering METHOD Put everything except the beetroot into a food processor and run until slushy. (You will probably want to split the tomatoes into 2 batches to avoid spillage.) Place 4 layers of clean muslin cheesecloth in a deep bowl. Pour the tomato mixture into the cloth. Tie up the corners of the fabric. Add the slice of beetroot to the bowl to color the liquid. Hang the bag from a shelf in the refrigerator with the bowl under. ※ Tips for Cooking Garlic Bread

- Wrap the garlic breads in a single layer of foil. - Cooking times vary according to size of bread loaf: - Large baguettes/French loaves take +- 20 minutes in a 200°C oven. - Small breads e.g. hotdog rolls take +- 10 minutes in a 200°C oven. - Over coals / BBQ Grill? Make sure the heat is moderate. Time varies between 15 – 20 minutes turning all the while. If you don't want the cut surface of the bread to get crisp and browned, cut the bread into vertical slices about 1 inch wide. Leave the bottom crust intact by stopping each cut about ¼ inch from the bottom. The bread remains in the loaf shape but has slices in it. Spread the butter mixture between the slices and wrap the loaf with aluminum foil. Top the buttered bread with shredded cheese to make cheese garlic bread. Having one of those days where it is easier to make bread at home than to leave and buy some. (Between tending to junior, doing laundry and tidying up!) I tossed all of the ingredients into the bread maker to make dough, added all the seasonings and flavourings then I'll bake it just before dinner tonight. Olive and dukkah - perfect accompaniment for felafel with tahini and salad for dinner.

Served here with felafel (which I will post recipe soon) salad and tahini Pictured next to garlic and rosemary bread Makes 1 large loaf or 2 small INGREDIENTS 310ml (1 1/4 cups) warm water 2 tsp (7g/1 sachet) dried yeast 2 tsp caster sugar 3 1/2 tbs olive oil 450g (3 cups) 00 flour 2 tsp sea salt flakes 1/2 Lemon cut into small slices 20 pitted kalamata olives  1/4 teaspoon oregano METHOD Combine the water, yeast, sugar and 2 tablespoons of oil in a small bowl. Set aside in a warm, draught-free place for 5 minutes or until frothy. Place flour and half of the sea salt in a bowl. Make a well in the centre and pour in yeast mixture. Use a wooden spoon to stir until combined, then use your hands to bring the dough together in the bowl. Turn onto a lightly floured surface and knead for 10 minutes or until smooth and elastic. BEEF RENDANG INGREDIENTS 1 lemongrass stalks, roughly chopped  20g/¾oz coriander seeds  ½tsp cumin seeds  ½tsp turmeric powder  50g block coconut cream  1½ large onions, sliced  3 garlic cloves, chopped  3 red chillies, seeds removed, chopped  1 thumb-sized piece ginger, peeled and chopped  1 bay leaf  750g boneless beef shin, cut into 2.5cm/1in cubes  400g canned coconut milk  250ml strong veal or beef stock, heated  METHOD - BEEF For the beef rending, pound the lemongrass to a pulp using a pestle and mortar. Tip the lemongrass into a small bowl. Heat the frying pan over a medium heat. Add the coriander, cumin seeds and turmeric and dry fry until fragrant. Tip the spices into a spice grinder or the pestle and mortar. Grind the spices to a powder if using a grinder, or pound in a pestle and mortar until the spices are as smooth as possible. Set aside. ※ Pizza Sandwich Toasted

Being eaten / modelled here by Jacob I had a craving for pizza but couldn't be bothered making dough so I decided I'd make a toasted sandwich that tasted like pizza. Pair this with a salad and you have a great pizzeria style lunch without the calories attached...or the bill. INGREDIENTS A tablespoon of tomato paste or concentrate Few leaves of fresh basil Tasty cheese (or ideally some mozzarella grated with some tasty)  Hot pepperoni or salami Sprinkle of oregano (dried) Salt & pepper top taste 2 Slices of bread METHOD Turn on griddle or fry pan and get a good heat going. Spread bread with tomato concentrate layer with ingredients above Cook until brown on both sides and cheese melts. Delicious!  

※ Garlic Roti

Most people are apprehensive to use garlic as a predominant flavour in their cooking.  This aromatic herb is not only good for reducing cholesterol but it actually aids in digestion. INGREDIENTS 1/2 cup jowar (white millet) flour 1/2 cup bajra (black millet) flour 1/2 cup whole wheat flour (gehun ka atta) 1/2 cup fresh green garlic (hara lehsun), chopped salt to taste Other ingredients 2 tbsp oil for cooking METHOD Combine all the ingredients in a bowl and knead into a dough adding warm water as required. This dough will not be very pliable and you will not be able to knead it very much. Divide the dough into 8 equal portions and roll out each portion into circles approx. 100 mm. to 125 mm. (4" to 5") in diameter. Cook each roti on a tava (griddle) using a little oil till both sides are golden brown. Serve hot.

※ French toast with crispy bacon

INGREDIENTS Olive oil 2 bacon rashers 3 eggs, lightly beaten 3 tbs milk 2 tbs caster sugar (I added a pinch of cinnamon to mine) 1 tbs butter 2 thick slices white sourdough bread Maple syrup, to serve Few drops of vanilla extract METHOD Heat oil in a frying pan over medium heat and cook bacon for 1-2 minutes on each side or until crisp and golden. Whisk eggs, milk and sugar & vanilla extract in a shallow dish. Heat a frying pan over medium heat, add half the butter and 1 tbs oil. Dip bread, 1 slice at a time, into egg mixture and turn to coat. Allow excess to drain. Cook for 3 minutes each side or until golden, adding remaining butter and oil as required. Arrange the toast on a serving plate top with the bacon and drizzle with maple syrup to serve.

At first glance, this looks like your run-of-the-mill french toast, but when you dig in, you find a perfectly delicious layer of Nutella in the center. I have made it quite a few times: here & here again . It tastes like a hot cinnamon donut straight from the fryer.. heavenly! But this time it is filled with chocolate.... Nutella Stuffed French Toast (using the donut french toast recipe) adapted by me. Ingredients * 2 eggs * 1/2 cup full fat milk * 4 teaspoons vanilla extract * 4 slices from a small white loaf or 2 slices from a large white loaf, each large slice cut in half * 1-ounce butter, plus a drop flavourless oil, for frying * 1/4 cup sugar * Nutella Directions Beat the eggs with the milk and vanilla in a wide shallow bowl. Spread bread with Nutella and sandwich another slice of bread ion the end. Soak the sandwiches in the eggy mixture for 5 minutes a side. I baked my first loaf of bread ever two weeks ago. I was expecting it to turn out like a brick, it was surprisingly delicious. Thick crust and soft of the inside. I was so pleased with the first loaf I made another the following day. (The picture above is the first loaf ) INGREDIENTS * 1-1/3 cups very warm water * 1 rounded tbsp. sugar * 2 teaspoons salt (I used Fleur de sel ) * 2 tbsp. butter (vary as needed; see below) * 4 rounded cups flour (nearly 5 level cups) * 1 tsp. active dry yeast FLAVOURS ADDED: 3 cloves of garlic to the basic recipe. 1/4 cup of chives and a few sprigs of parsley roughly chopped.
