We have some very dear friends from Texas who we would love to visit one day. We picked up a Texan Recipe book to get some inspiration in the kitchen. Miggy in his bouncer is not amused. I will post some scans later if anybody is interested.

※ Chocolate chip banana bread with a cinnamon sugar maple crust


INGREDIENTS:

  • 2 cups plain flour
  • 1/2 cup milk chocolate chips
  • 2 tsp baking powder
  • 1 tsp ground cinnamon (for topping)
  • 1 tsp sugar (for topping)
  • 1 tsp maple sugar (for topping)
  • ½ cup caster sugar
  • ½ cup brown sugar
  • 2 eggs, lightly beaten
  • 1/3 cup (80mL) oil
  • 1 tsp vanilla extract
  • 4 ripe bananas, mashed
  • Butter and honey, to serve

METHOD

Preheat the oven to 180°C. Grease and line the base of a loaf pan (mine is 11cm x 21cm).

Sift the flour & baking powder into a large bowl. Stir in the sugars. In a separate bowl, combine the eggs, oil and vanilla. Add a mashed banana to the dry ingredients and add the combined wet ingredients. Add chocolate chips, fold until just combined - do not overmix.

Place mixture into the loaf pan, sprinkle with cinnamon, and maple sugar and regular sugar and bake for 50 minutes or until a skewer inserted into the middle of the loaf comes out clean. Allow to cool for 10 minutes, then remove and place on a wire rack to cool.

Once cooled, slice it thickly. Serve with a spread of butter and drizzle with honey.

※ Dulche De Leche Brownies



If you have no time to make Dulche De Leche you can substitute with Top and Fill by Nestle

For the Dulce De Leche  Filling / topping :
2 x 395g cans sweetened condensed milk 

(I make a double batch as it takes a while and is worthwhile as will keep in the fridge)Thick and glossy, rich and sweet, this spreadable golden caramel turns simple treats into luxurious desserts. Beware - it's addictive!

Preheat oven to 220°C. Pour condensed milk into a heatproof baking dish. Place dish in a roasting pan. Pour water into pan to come halfway up the side of dish.

Cover with foil and bake, refilling the pan with water if necessary, for 1 hour 45 minutes or until dark golden. Whisk the mixture until smooth. Pour into a 500ml (2-cup) capacity sterilised jar and seal. Once opened, store in the fridge. 

REALLY EASY BROWNIES
INGREDIENTS


  • 125g butter
  • 1/2 cup cocoa powder ( I used dutch dark)
  • 3 eggs (60g)
  • 1 1/2 teaspoons vanilla essence
  • 1 1/2 cup caster sugar
  • 3/4 cup plain flour1/4 cup choc chips or caramel chips (I used caramel)

METHOD  

1. Preheat oven to 160 degrees C and line a medium (22cmx22cm) square baking dish with baking paper.  

2. Sift the cocoa into a medium bowl. Melt the butter over low heat. When the butter is melted add to the cocoa in a steady stream, stirring with a metal fork as you go. Continue to whisk until smooth.  

3. Whisk the eggs and vanilla essence together. Add to the cocoa mixture in a steady stream, whisking with the fork as you go, until smooth.  

4. Stir through the caster sugar until well combined.  

5. Fold in the flour and stir gently until evenly and just combined.   

6. Drizzle some Dulce de Leche over brownie batter, (may need to be microwaved for about 30 seconds or so so it isn't so solid) I ended up using about 6 tablespoons worth)Sprinkle over some choc chips.

7. Bake in the preheated oven for 25-30 minutes, or until firm to touch. Allow the brownies to cool in the tray before cutting and serving. ENJOY!
