※ Cordials

RASPBERRY CORDIAL Sugar syrup - 2 cups water+2 cups sugar 300g raspberries (fresh or frozen) juice of 2 lemons 2 teaspoons tartaric acid Make the sugar syrup. Add the raspberries and lemon juice then simmer for 5 minutes. Stir well, and mash the raspberries up a little. Add the tartaric acid, then put the mixture through a strainer and allow to cool. Pour into a bottle and store in the fridge for up to 2 weeks. LEMON CORDIAL 8 lemons Sugar syrup - 1.5 litres water + 1.5 kilos sugar, boiled together until the sugar has dissolved. Grate about 2 tablespoons of rind from the lemons before you cut them. Juice the lemons - if you put them in the microwave for a minute before cutting them, you'll get more juice. Add the grated rind and the juice in a large bowl. Pour the sugar syrup over the juice and mix well. Some great vintage punch recipes here.   CALYPSO PUNCH 3 cinnamon sticks 1/4 cup sugar 2 cups water 2 cups pineapple juice 1 cup orange juice VA cup lemon juice 4 7-ounce bottles 7-Up 2 trays ice cubes Simmer cinnamon sticks and sugar in water ten minutes. Cool and discard cinnamon sticks. Chill ingredients. Combine fruit juices with sugar syrup in a chilled large punch bowl. Slowly pour in 7-Up. Makes 2 quarts or about 16 punch cup servings. Garnish bowl with lemon and orange slices topped with maraschino cherries and mint leaves. SPARKLING FRUIT APPETIZERS Each of these makes 6 servings:  HAWAIIAN 7-UP: Mix 1 7-ounce bottle 7-Up with 3 cups pineapple juice and garnish glasses with pineapple chunks and maraschino cherries. TROPIC TREAT: Mix 3 7-ounce bottles 7-Up with 1 undiluted 6-ounce can frozen orange juice and garnish glasses with slices of fresh orange. APPLE FIZZ: Mix 1 7-ounce bottle 7-Up with 3 cups apple juice and garnish glasses with apple slices dipped in lemon juice (to prevent discoloration). GRAPE COOLER : Mix 3 7-ounce bottles 7-Up with 1 undiluted 6-ounce can frozen grape juice and garnish glasses with small bunches of fresh grapes. EXOTIC SAUCE FOR FRUIT 1 cup orange juice  1/2 teaspoon allspice I/2 cup honey Va teaspoon salt 1/4 teaspoon cinnamon  2 7-oz. bottles 7-Up Simmer all ingredients except 7-Up for five minutes and cool. ※ Refreshing Ginger Cordial

Served with soda water and a lime slice Sorry for lack of recipe updates I have been unwell and off food. (I know shock horror to those who know me!) Here is a simple recipe for ginger cordial that is delicious and refreshing. Shown here served with soda water. INGREDIENTS 1 li me 1/3 cup (80g) caster sugar 7cm-piece fresh ginger, peeled, sliced crossways Ice cubes, to serve Lime wedges, to serve Chilled tea or soda water, to serve METHOD Use a peeler to peel the rind from the lime, then juice the lime. Place the sugar, ginger, lime rind, lime juice and 1.5 litres water in a saucepan. Stir over a low heat until the sugar dissolves. Bring to boil. Reduce heat to medium-low. Simmer for 10 minutes. Remove from heat. Set aside to cool. Strain into a large jug. Place in the fridge to chill. Discard the ginger and zest and lime rind. To serve, place some cordial in a glass with a few ice cubes and lime wedges. Pour over chilled tea or soda water to serve.

INGREDIENTS 2 Granny Smith apples, halved, cored, finely chopped 1 small cucumber, finely chopped 1 cup (packed) fresh spinach 3/4 cup brewed green tea, room temperature 1/4 cup fresh mint leaves plus 2 sprigs mint (for garnish) 2 tablespoons honey Fresh lemon Juice METHOD Purée apples, cucumber, spinach, tea, 1/4 cup mint leaves, and honey in a blender until very smooth. Strain juice through a fine-mesh sieve into a medium pitcher. Season to taste with lemon juice.

I really love old cookbooks. I scour vintage shops and old book resellers and often the internet for vintage cookbooks, the older the better. Sometimes you find real gems inside and pictured here is a scan of one of those!  A hand written recipe for "Grog" (with the ingredients listed I assume it is for beer)  

※ Traditional Lemonade

  INGREDIENTS 3/4 cup caster sugar 1 cup boiling water 1 cup lemon juice (approx 4 lemons) 2 cups ice cubes Lemon slices, to serve METHOD Place sugar and boiling water in a heatproof jug. Stir to dissolve sugar. Set aside to cool completely. Strain lemon juice into sugar mixture.  Add 2 cups cold water.  Stir to combine.  Stir in ice cubes and lemon slices. (or if preferred lime) Serve. TIP: If you want fizzy and not still, mix with soda water.

※ Redskin Vodka

INGREDIENTS 17 Unit/s Redskins (Small 8cm Ones) 1 bottle of ABSOLUT VODKA METHOD Blending Instructions: Take a full bottle of vodka and pour 1/4 of it into another bottle. Take 17 small redskins and push them into the bottle of vodka Top the bottle of vodka up from the liquid you previously poured out Leave the bottle until all of the redskins dissolve Give it a shake every now and again to help the process (This could take anywhere between 2 hours and 2 days depending on the redskins)  A layer of gum will form on top of the vodka, this is normal Once the redskins have completely dissolved poor the vodka syrup through a coffee filter to remove the gum. To serve, use one shot of redskin vodka and top with lemonade (If its too sweet you can use tonic water instead)

※ Strawberry Vodka Cordial

INGREDIENTS 3  cups  ripe  strawberries 1/2 cup sugar 946.0 ml   vodka   METHOD:       Clean berries without washing; set aside in tall half-gallon jar.       Mix sugar with 1 cup water and stir over low heat until sugar dissolves.       Increase heat; bring mixture to boil and set aside to cool.       Mix cooled syrup with vodka and pour over strawberries.       Cover tightly and store in a cool, dark place for 1 week.       Pass liqueur through a fine mesh strainer       Strain again through coffee filter into a bottle.

  A Bloody Mary is a popular cocktail containing vodka, tomato juice, and usually other spices or flavorings such as Worcestershire sauce, Peri-Peri Sauce, Tabasco sauce, beef consomme or bouillon, horseradish, celery, olive, salt, black pepper, cayenne pepper, lemon juice, and celery salt. It has been called "the world's most complex cocktail. Bloody Mary recipe (as taught by the New York School of Bar-tending)   Ingredients * 1 oz. to 1½ oz. (30-45 ml) vodka in a highball glass filled with ice.  * Fill glass with tomato juice  * 1 dash celery salt  * 1 dash ground black pepper  * 1 dash Tabasco sauce  * 2-4 dashes Worcestershire sauce  * 1/8 tsp. horseradish (pure, never creamed)  * Dash of lemon or lime juice Garnish with celery stalk. ※ Lemon, Honey & Ginger Cordial

   A natural and delicious hot beverage, a wonderful pick me if you have a cold or 'flu.   Drink this with mineral or soda water for a ginger beer style drink which is thirst-quenching and refreshing. Ingredients: Organic honey, lemons, root ginger  pictured here served with San Pellegrino mineral water. INGREDIENTS 2 cups sugar 2 cups water 1 strip lime or lemon rind 1 large ginger root, chopped 2 tsp cream of tartar 2 tsp honey 1 cup lemon or lime juice METHOD Boil the water, sugar, ginger, honey, rind and cream of tartar for 5 minutes. Add the lemon or lime juice. Bring to the boil again. Take off the heat, strain and pour into a sterilized bottle. Use like ordinary cordial, either with iced water for a cooling drink, or hot water for a warming drink on a winter's night. ( Note: this cordial should last for several weeks in the fridge. However, if it bubbles or looks odd, throw it out.)

INGREDIENTS Juice of 1 blood orange Juice of 1 lime 1 cup Campari** 1 sprig of mint to serve METHOD Juice orange & lime, straining the pulp from the juice if necessary. Add Campari, Serve with a sprig of mint. ** (you may also use soda water / vodka / or lemonade if you like it sweet) Campari , a bright red bitter aperitif is comprised of a still top secret recipe and the taste is nearly impossible to describe. It's distinctively not sweet, though not particularly savory either and surprisingly refreshing.

  An edgy public radio show has revealed what it purports to be the secret recipe for Coca Cola a formula which has become the stuff of legend after decades of careful marketing by one of the world's most recognizable brands. I have looked it up and decided I want to try and make it and see for myself.  INGREDIENTS Fluid extract of Coca 3 drams USP Citric acid 3 oz Caffeine 1oz Sugar 30 (it is unclear from the markings what quantity is required) Water 2.5 gal Lime juice 2 pints 1 qrt Vanilla 1oz Caramel 1.5oz or more to colour 7X flavour (use 2oz of flavour to 5 gals syrup): Alcohol 8oz Orange oil 20 drops Lemon oil 30 drops Nutmeg oil 10 drops Coriander 5 drops Neroli 10 drops Cinnamon 10 drops  Brew it yourself METHOD NB. 1 batch of 7x formula will produce three batches cola syrup, or approximately 54 litres of cola. Been experimenting with cordials lately, the last few functions I have catered they have been a huge success. Today I will start with ginger. Ingredients * 2 cups sugar * 2 cups water * 1 strip lime or lemon rind (no white) * 1 large ginger root, chopped * 2 tsp cream of tartar * 1 cup lemon or lime juice Directions 1. Boil the water, sugar, ginger, rind and cream of tartar for 5 minutes. Add the lemon or lime juice. Bring to the boil again. 2. Take off the heat, strain and pour into a sterilized bottle. 3.
