※ Honey Joys


I had to make these after a friend posted a picture of a delicious cheesecake and honey joy in one. So I made a honey joy batch the next day. They were a childhood favourite. I sent the box off to my husbands work place so i wouldn't eat them all! 


INGREDIENTS
75g butter (I used Lescure *) 
1/3 cup (115g) honey
1 tablespoon castor sugar
5 cups cornflakes


METHOD
Preheat oven to 180C.
Line 2 12-hole muffin pans with paper cases.
Combine butter, honey and sugar in a small saucepan, stir over heat until smooth.
Place cornflakes in large bowl, add butter mixture, stir until cornflakes are well coated. Divide cornflake mixture among cases.
Bake in the oven for 8 minutes.
Stand 15 minutes or until firm.

* In the kitchen, Lescure butter is preferred for its low water content and minimal maturation, resulting in a better overall flavor.
