A favourite in our household. A little time consuming (2 hours to boil the oranges) but otherwise really easy to make.
- 2 large oranges
- 250g raw sugar
- 5 large eggs
- 250g (1 1/2 cups) ground almonds
- 1/4tsp bicarbonate of soda
- Dash Vanilla extract
- Two tablespoons Maple Syrup
- Thick cream, custard or yoghurt, to serve
Place the oranges in a saucepan, cover with water and bring to the boil. Simmer for 2 hours, adding more water when necessary to keep the oranges covered. Drain and cool slightly. Preheat oven to 180°C.
Butter a 25cm spring form pan and line the base with non-stick baking paper.

Beat eggs and sugar until thick and pale. Combine almonds and bicarbonate of soda, vanilla and maple syrup and fold into the egg mixture with the pureed oranges until well combined.
Pour into the buttered and lined pan and cook for 1 hour or until cooked through and a skewer inserted into the centre of the cake comes out clean.
