Ingredients
  • 1/2 butternut pumpkin
  • garlic
  • olive oil
  • 100 g butter
  • 1 med red onion
  • 1 medium carrot
  • 1 shallot
  • 250 gsm peas
  • 200g arborio rice
  • 80 g parmesan cheese
  • parsley, chopped
  • chicken stock or for vegetarian use vege stock of choice
  • fresh cracked black pepper
  • coarse sea salt
  • 4 cloves of black garlic.
  • Served with sprigs of fresh Thyme
 
(for vegetarian version substitute stock)
