Ingredients
- 1/2 butternut pumpkin
- garlic
- olive oil
- 100 g butter
- 1 med red onion
- 1 medium carrot
- 1 shallot
- 250 gsm peas
- 200g arborio rice
- 80 g parmesan cheese
- parsley, chopped
- chicken stock or for vegetarian use vege stock of choice
- fresh cracked black pepper
- coarse sea salt
- 4 cloves of black garlic.
- Served with sprigs of fresh Thyme
(for vegetarian version substitute stock)
